Mathieu Paquet Les Fromentaux Moulin-à-Vent 2022 is an organic Gamay from a high-elevation Beaujolais vineyard rooted in granite soils. Whole-cluster fruit is fermented on the skins in concrete, then rested briefly in neutral oak before bottling unfined and unfiltered with minimal sulfur. Dark cherry, raspberry, spice and mineral notes meet fresh acidity and fine structure. Serve slightly cool with roast poultry, charcuterie or aged cheese.
